If we are just sightseeing and going to things like the Shanghai Acrobat Show and Dinner, how dressy do we need to be? Is China pretty informal? Shorts, jeans, etc? Would there be any need to bring dresses, tie/jacket, etc?

The evening entertainment and dinners are informal events. You would do fine in jeans. As a tourist, you do not need any formal or business attire.
I have been to business meetings where some wore suits and ties, and some showed up in just shirts and pants. Nobody took offence.

It´s very informal. We went to that show and I wore shorts and a ';nice'; t-shirt. Forget the tie!
