I was wondering if there was any differnc on the differnt z trains as i have done a bit of searching on the internet and found this

Z21 19:00 6:58 without dinner

Z5 19:14 7:12 with dinner

i was wondering if anyone had any infomation that would explain that dinner bit

I think you will find, that there is enough demand for this number of trains to depart Beijing each night.

Little or no difference in the actual train, just in the carriges you choose.

The different trains probably have a couple of diffent stops, therefore allowing them to travel close to each other but with diffent stops making the time, or even side track deviations.

The T trains are the fastest and most modern.

Yes, some beijing-shanghai direct train do serve dinner, but some not. My personal experience is, If the ticket you bought is soft sleeper from shanghai to beijing, you will get a free dinner. IIRC, those trains that provide dinner are under the jurisdiction of Shanghai railway, instead of Beijing railway.
